  • 1 large onion, diced
  • 45 garlic cloves, minced
  • 12 bell peppers, diced
  • 12 jalapeños, diced (optional for heat)
  • 1 can (28 oz.) crushed tomatoes
  • 2 tbsp. tomato paste
  • 2 cups beef or vegetable broth
  • 12 cans kidney, black, or pinto beans (optional)

Instructions

  • Brown the Meat: In a large pot, heat 2 tbsp. oil over medium-high heat. Add ground venison and cook until browned (about 5-7 minutes). Drain excess liquid if necessary.
  • Sauté Vegetables: Add onions and bell peppers. Cook for 3-4 minutes until softened, then add garlic and jalapeños. Cook for another 30 seconds.
  • Toast the Spices: Stir in chili powder, cumin, smoked paprika, cinnamon, and cayenne pepper. Cook for 30 seconds to release flavors.
  • Add Liquids & Tomatoes: Pour in crushed tomatoes, tomato paste, and broth. Stir well to combine.
  • Simmer: Add beans (if using) and bay leaves. Reduce heat to low, cover, and let simmer for at least 1.5 to 2 hours, stirring occasionally.
  • Final Adjustments: Taste and adjust seasoning as needed. If the chili is too thick, add a little broth. If too thin, simmer uncovered for the last 30 minutes.
  • Serve & Enjoy: Remove bay leaves, ladle into bowls, and top with cheese, sour cream, jalapeños, or fresh cilantro.
