- 1 ¾ cups pumpkin puree (fresh or canned)
- ¾ cup brown sugar
- 2 large eggs
- 1 cup heavy cream or evaporated milk
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground ginger
- ¼ teaspoon ground cloves
- ¼ teaspoon salt
Instructions
- Prepare the crust: Mix flour and salt. Cut in butter until crumbly. Add ice water gradually until dough forms. Chill for 30 minutes.
- Roll and fit the crust: Roll out the dough, place it in a pie dish, and crimp the edges. Chill while preparing the filling.
- Make the filling: Whisk pumpkin, sugar, eggs, cream, vanilla, and spices until smooth.
- Assemble and bake: Pour the filling into the crust. Bake at 425°F for 15 minutes, then reduce to 350°F and bake for another 35-40 minutes.
- Cool and serve: Let the pie cool completely before slicing. Serve with whipped cream or caramel drizzle.

For a dairy-free version, substitute heavy cream with coconut milk.
