Instructions
- Prepare the Baking Sheet: Line a large baking sheet with parchment paper or lightly grease it.
- Cook the Syrup: Combine sugar, corn syrup, and water in a medium saucepan over medium heat. Stir until the sugar dissolves, then stop stirring. Attach a candy thermometer and cook until the mixture reaches 300°F (150°C), the hard crack stage.
- Add Butter and Pecans: Remove from heat and quickly stir in butter and pecans. Add vanilla extract and a pinch of salt, then stir in baking soda. The mixture will foam up.
- Pour and Spread: Immediately pour the mixture onto the prepared baking sheet. Spread it into an even layer.
- Cool: Let it cool completely at room temperature for about 30 minutes.
- Break and Store: Once cooled, break the brittle into pieces and store in an airtight container for up to 2 weeks.
