Description

Pecan brittle is a delicious candy made with caramelized sugar, buttery pecans, and a dash of baking soda to create a crispy, crunchy texture. Perfect for holiday gifting, a sweet treat, or just a snack, this recipe balances the richness of pecans with the sweet crunch of caramel, making it a truly irresistible indulgence.

Ingredients

Scale
  • 1 cup sugar
  • 1/2 cup light corn syrup
  • 1/4 cup water
  • 1/2 cup unsalted butter
  • 1 1/2 cups pecans (toasted or raw)
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • Pinch of salt

Instructions

  • Prepare the Baking Sheet: Line a large baking sheet with parchment paper or lightly grease it.
  • Cook the Syrup: Combine sugar, corn syrup, and water in a medium saucepan over medium heat. Stir until the sugar dissolves, then stop stirring. Attach a candy thermometer and cook until the mixture reaches 300°F (150°C), the hard crack stage.
  • Add Butter and Pecans: Remove from heat and quickly stir in butter and pecans. Add vanilla extract and a pinch of salt, then stir in baking soda. The mixture will foam up.
  • Pour and Spread: Immediately pour the mixture onto the prepared baking sheet. Spread it into an even layer.
  • Cool: Let it cool completely at room temperature for about 30 minutes.
  • Break and Store: Once cooled, break the brittle into pieces and store in an airtight container for up to 2 weeks.

Notes

  • Be sure to monitor the caramel closely to avoid burning, especially as it nears 300°F.
  • You can sprinkle chocolate or add other spices for a unique twist.
