Instructions

  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a medium bowl, mix together oats, flour, baking soda, salt, and cinnamon. Set aside.
  • In a separate bowl, cream together the softened butter and brown sugar until light and fluffy.
  • Beat in the egg (or flax egg) and vanilla extract until combined.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Stir in the dried cranberries (and nuts, if using).
  • Scoop tablespoon-sized portions of dough and drop them onto the prepared baking sheet, spacing them about 2 inches apart.
