Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, mix together oats, flour, baking soda, salt, and cinnamon. Set aside.
- In a separate bowl, cream together the softened butter and brown sugar until light and fluffy.
- Beat in the egg (or flax egg) and vanilla extract until combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Stir in the dried cranberries (and nuts, if using).
- Scoop tablespoon-sized portions of dough and drop them onto the prepared baking sheet, spacing them about 2 inches apart.
