Ingredients
For the Chicken:
- 2 large boneless, skinless chicken breasts (or chicken thighs)
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- 1 teaspoon Italian seasoning
- 2 tablespoons olive oil (or butter for richer flavor)
For the Sauce:
- 3 cloves garlic, minced
- ½ cup sun-dried tomatoes, chopped (use oil-packed for extra richness)
- 1 cup heavy cream (or half-and-half for a lighter version)
- ½ cup chicken broth
- ½ cup parmesan cheese, freshly grated
- ½ teaspoon red pepper flakes (optional, for heat)
- 1 teaspoon dried basil (or 2 tablespoons fresh basil)
For the Pasta:
- 8 ounces fettuccine, penne, or spaghetti
- 4 cups water
- 1 teaspoon salt
Optional Add-Ons:
- ½ teaspoon cayenne pepper (for extra spice)
- 1 cup baby spinach (for added greens)
- ¼ cup white wine (adds depth to the sauce)
Instructions
Step 1: Prepare and Season the Chicken
- Pat dry the chicken breasts and season both sides with salt, black pepper, garlic powder, paprika, and Italian seasoning.
- Heat 2 tablespoons olive oil in a large skillet over medium-high heat.
Step 2: Sear the Chicken
- Add the chicken to the skillet and cook for 4-5 minutes per side, until golden brown and almost cooked through.
- Remove the chicken from the pan and set it aside (it will finish cooking in the sauce).
Step 3: Make the Sun-Dried Tomato Cream Sauce
- In the same skillet, reduce heat to medium and add minced garlic. Sauté for 30 seconds until fragrant.
- Add sun-dried tomatoes and cook for another minute.
- Pour in chicken broth and scrape up the brown bits from the bottom of the pan. Let it simmer for 2-3 minutes.
- Stir in heavy cream, red pepper flakes, and parmesan cheese, and let the sauce simmer until it thickens (about 5 minutes).
Step 4: Cook the Pasta
- While the sauce simmers, bring a large pot of salted water to a boil.
- Add pasta and cook until al dente, following the package instructions.
- Before draining, reserve ½ cup of pasta water to adjust the sauce consistency later if needed.
Step 5: Combine Everything
- Slice the chicken into strips and return it to the skillet.
- Add the drained pasta to the sauce, tossing everything together to coat well.
- If the sauce is too thick, add small amounts of reserved pasta water until the desired consistency is reached.
Step 6: Garnish and Serve
- Sprinkle with fresh basil or parsley and extra parmesan cheese.
- Serve immediately with garlic bread or a side salad.
Notes
For a deeper flavor, add a splash of white wine while deglazing the pan with chicken broth. This enhances the sauce’s complexity and makes it feel restaurant-quality!
