  • 1 teaspoon coriander powder
  • ½ teaspoon red chili powder (optional, for extra heat)
  • ½ teaspoon garam masala
  • Salt to taste
  • Fresh cilantro, chopped for garnish

Optional Additions:

  • 1 teaspoon lemon juice (for a tangy kick)
  • 1 small bell pepper, finely diced (adds color and crunch)

Instructions

Step 1: Boil and Mash the Eggs

  1. Hard-boil the eggs for 10-12 minutes, then transfer them to cold water.
  2. Peel and mash the eggs with a fork, keeping them slightly chunky for texture.

Step 2: Prepare the Masala Base

  1. Heat 2 tablespoons of oil in a pan over medium heat.
  2. Add the chopped onions and sauté until golden brown.
  3. Stir in the ginger-garlic paste and green chilies. Sauté for a minute.
  4. Add tomatoes, turmeric, cumin, coriander, red chili powder, and salt.
  5. Cook until the tomatoes are soft and the oil starts to separate from the masala.

Step 3: Add the Eggs and Finish

  1. Add the mashed boiled eggs and mix well to coat them with the masala.
  2. Cook on low heat for 3-5 minutes, stirring occasionally.
  3. Add garam masala and fresh cilantro, then mix well.
  4. Turn off the heat and squeeze in some lemon juice for extra flavor.

Notes

For a Bengali-style Egg Bharta (Deemer Bhorta), use mustard oil for a bold flavor and increase the green chilies for extra heat.
