Spanakopita (Spinach Pie):
- 1 pack phyllo dough
- 2 cups spinach, chopped
- 1 cup feta cheese, crumbled

- 2 eggs, beaten
- 2 tbsp olive oil
- 1 tbsp dill or parsley, chopped
Chicken Souvlaki:
- 2 lbs chicken breast, cubed
- ¼ cup olive oil
- 3 tbsp lemon juice
- 3 garlic cloves, minced
- 2 tsp dried oregano
- 1 tsp salt
- ½ tsp black pepper
Moussaka:
- 2 eggplants, sliced
- 1 lb ground beef or lamb
- 1 onion, diced
- 2 cups tomatoes, pureed
- 1 cup béchamel sauce
- 1 tsp cinnamon
- 1 tsp paprika
- Olive oil for frying
Baklava:
- 1 pack phyllo dough
- 2 cups walnuts or pistachios, chopped
- 1 cup melted butter
- 1 cup sugar
- ½ cup honey
- ½ cup water
- 1 tsp cinnamon
Instructions
- Tzatziki: Grate cucumber, squeeze out excess water, and mix with yogurt, garlic, lemon juice, olive oil, dill, and salt. Chill before serving.
- Spanakopita: Sauté onions and spinach, then mix with feta, eggs, and herbs. Layer phyllo dough with olive oil, add filling, top with more phyllo, and bake at 375°F for 40 minutes.
- Chicken Souvlaki: Marinate chicken in olive oil, lemon juice, garlic, and oregano. Skewer and grill for 10–12 minutes.
- Moussaka: Fry eggplant slices. Sauté onions and meat, add tomatoes and spices, then layer with eggplant and béchamel. Bake at 375°F for 45 minutes.
- Baklava: Layer phyllo dough and nut mixture, cutting before baking at 350°F for 35 minutes. Pour honey syrup over after baking.
Notes
For a healthier twist, use whole wheat phyllo dough, reduce butter, and bake instead of frying where possible.
