Ingredients
- Ditalini Pasta – 1 cup
- Olive Oil – 2 tablespoons
- Garlic – 3 cloves, minced
- Diced Tomatoes – 1 cup (fresh or canned)
- Red Pepper Flakes – ¼ teaspoon (optional)
- Salt & Black Pepper – To taste
- Parmesan Cheese – ½ cup, grated
- Fresh Basil or Parsley – For garnish

Instructions
- Cook the Pasta: Boil salted water and cook ditalini pasta for 8-10 minutes until al dente. Drain, reserving ½ cup of pasta water.
- Sauté the Garlic: Heat olive oil in a skillet over medium heat. Add garlic and red pepper flakes, sautéing for 1-2 minutes until fragrant.
- Prepare the Sauce: Add diced tomatoes and cook for 5-7 minutes, stirring occasionally. Season with salt and black pepper.
- Combine & Serve: Toss in the cooked pasta, adding Parmesan cheese and a splash of reserved pasta water if needed. Garnish with fresh basil or parsley.
Notes
For a creamier texture, add a splash of heavy cream or a dollop of ricotta cheese before serving.
