  • 2 tablespoons olive oil
  • Fresh cilantro, shredded cheese, and sour cream for garnish (optional)

Instructions

  • Sauté Aromatics: Heat olive oil in a large pot over medium heat. Sauté onions until softened, then add garlic and cook for another minute.
  • Brown the Meat: Add ground beef or chuck roast, cooking until browned. Drain excess fat if necessary.
  • Add Seasonings: Stir in chili powder, cumin, smoked paprika, oregano, cayenne (if using), salt, and pepper. Cook for 1-2 minutes.
  • Incorporate Tomatoes & Broth: Stir in diced tomatoes, tomato paste, and beef broth. Bring to a boil, then reduce heat.
  • Simmer: Let the chili cook on low heat for 30 minutes, stirring occasionally.
  • Add Beans: Stir in kidney and pinto beans. Simmer for another 10-15 minutes.
