Description

Chickpea and Sweet Potato Curry is a hearty, comforting dish packed with flavor and nutrition. This plant-based meal is perfect for cozy dinners and meal prep, offering a delicious balance of protein, fiber, and spices. The combination of chickpeas, sweet potatoes, and aromatic curry seasonings makes this a satisfying and nourishing choice for any diet.

Ingredients

Scale
  • 2 cups cooked chickpeas

  • 2 medium sweet potatoes, peeled and cubed

  • 1 can (400 ml) coconut milk

  • 1 large onion, diced

  • 3 garlic cloves, minced

  • 1 tablespoon grated ginger

  • 1 can (400 g) diced tomatoes

  • 1 tablespoon curry powder

  • 1 teaspoon ground cumin

  • 1 teaspoon turmeric powder

  • 1/2 teaspoon chili flakes (optional)

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • Fresh cilantro for garnish

Instructions

  1. Prepare the Base: Heat olive oil in a large pan over medium heat. Add diced onions and sauté until translucent, about 5 minutes. Stir in garlic and ginger, cooking for another 2 minutes until fragrant.

  2. Bloom the Spices: Add curry powder, cumin, turmeric, and chili flakes (if using) to the pan. Stir well to coat the onions, cooking for 1–2 minutes to release the spices’ aromas.

  3. Add Sweet Potatoes and Tomatoes: Toss in the cubed sweet potatoes and canned tomatoes, stirring to combine. Let the mixture simmer for about 5 minutes to slightly soften the sweet potatoes.

  4. Incorporate the Coconut Milk and Chickpeas: Pour in the coconut milk and add the cooked chickpeas. Stir well to ensure everything is evenly coated in the sauce. Season with salt and pepper.

  5. Simmer and Finish: Cover and let simmer for 20–25 minutes, stirring occasionally, until the sweet potatoes are tender and the flavors are well combined. Adjust seasoning as needed.

  6. Serve and Garnish: Remove from heat and garnish with fresh cilantro. Serve warm with rice, quinoa, or naan.

Notes

For extra depth of flavor, consider roasting the sweet potatoes before adding them to the curry. You can also add leafy greens like spinach or kale for added nutrients.
