For the Chicken & Vegetables:
- 2 boneless, skinless chicken breasts, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 yellow onion, thinly sliced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp butter
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- ½ tsp paprika
- ½ tsp onion powder
For the Cheesesteak:
- 4 slices provolone cheese (or mozzarella, white American cheese)
- 2 hoagie rolls (or sub rolls), split
- 1 tbsp butter, for toasting rolls
Optional Add-Ons:
- ½ cup mushrooms, sliced (for extra flavor)
- 1 tbsp hot sauce (for a spicy kick)
- 1 tbsp mayo (spread on rolls for extra creaminess)
Instructions
Step 1: Prepare the Chicken
- Place the chicken breasts in the freezer for 15 minutes (this makes slicing easier).
- Slice the chicken into thin strips. Season with salt, black pepper, garlic powder, paprika, and onion powder.
Step 2: Sauté the Vegetables
- Heat 1 tbsp olive oil in a skillet over medium heat.
- Add sliced bell peppers, onions, and minced garlic. Sauté until softened and slightly caramelized (5-7 minutes).
- Remove vegetables from the skillet and set aside.
Step 3: Cook the Chicken
- In the same skillet, add 1 tbsp olive oil and butter.
- Add the sliced chicken and cook until fully cooked and lightly browned (5-7 minutes).
- Return the sautéed vegetables to the skillet and mix well.
Step 4: Melt the Cheese
- Lower the heat and divide the chicken and veggie mixture into two portions in the pan.
- Lay two slices of cheese over each portion. Cover the skillet with a lid and let the cheese melt (1-2 minutes).
Step 5: Toast the Hoagie Rolls
- Spread butter on the inside of the hoagie rolls.
- Toast on a skillet or in the oven at 375°F (190°C) for 3-4 minutes until golden brown.
Step 6: Assemble the Sandwich
- Spread mayo (if using) inside the toasted hoagie rolls.
- Use a spatula to scoop the cheesy chicken and veggie mixture into the rolls.
- Serve hot with fries, coleslaw, or a fresh salad. Enjoy!

For extra juiciness, add a splash of chicken broth to the skillet when cooking the chicken. This helps keep the meat tender and flavorful.
