- 1 cup bell peppers (thinly sliced, red, green, yellow)

- 4 slices provolone cheese (or cheese of choice)

- 1 teaspoon garlic powder
- ½ teaspoon paprika
- Salt and pepper to taste
- 2 hoagie rolls
Instructions
- Slice the chicken breasts into thin strips and season with garlic powder, paprika, salt, and pepper.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Add chicken and cook for 6-8 minutes until golden and cooked through. Set aside.
- In the same skillet, heat the remaining olive oil. Sauté onions and bell peppers until tender-crisp, about 4-5 minutes.
- Return the chicken to the skillet, combine with vegetables, and cook for an additional 2-3 minutes.
- Place slices of cheese over the chicken and vegetables, cover, and let melt for 1-2 minutes.
- Lightly toast hoagie rolls and fill with the cheesy chicken and vegetable mixture. Serve hot.
