Ingredients

Scale

For the Salad:

  • 4 cups curly kale, de-stemmed and chopped
  • 2 cups green cabbage, finely shredded
  • ¼ cup sliced almonds (or pecans/walnuts)
  • ¼ cup dried cranberries

For the Dressing:

  • 2 tbsp apple cider vinegar
  • 1 tbsp honey (or maple syrup for vegan option)
  • 1 tsp Dijon mustard
  • 2 tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp black pepper

Instructions

  • Prepare the Kale:

    • Wash and dry the kale thoroughly. Remove the tough stems and chop the leaves into bite-sized pieces.
    • Massage the kale with a drizzle of olive oil for 2-3 minutes until softened.
  • Toast the Almonds:

    • In a dry skillet over medium heat, toast the sliced almonds for 2-3 minutes until golden and fragrant. Set aside.
  • Make the Dressing:

    • In a small bowl, whisk together the apple cider vinegar, honey, Dijon mustard, olive oil, salt, and black pepper until well combined.
  • Assemble the Salad:

    • In a large bowl, toss the chopped kale and shredded cabbage together.
    • Pour the dressing over the greens and mix well to coat evenly.
    • Top with toasted almonds and dried cranberries.
  • Serve & Enjoy:

    • Let the salad sit for 10 minutes before serving to allow the flavors to meld.
    • Enjoy immediately or store in the fridge for up to 24 hours.

Notes

To make this salad ahead of time, store the dressing separately and toss it in just before serving to keep the kale fresh and crisp.
