    • 1 cup lychees (seeded, fresh or canned)
    • 1 cup longans (seeded, fresh or canned)
    • Optional: dragon fruit, papaya, or durian for variety
  • Jellies and Add-ins
    • 1 cup pandan jelly cubes
    • 1 cup grass jelly cubes (optional)
    • 1 cup red rubies (tapioca-coated water chestnuts)
    • Optional: sweet corn or basil seeds for texture
  • Coconut Milk Base
    • 1 can coconut milk (400ml)
    • ½ cup water
    • 2 tablespoons granulated sugar (adjust to taste)
    • ½ teaspoon salt
    • Optional: 1 pandan leaf or ½ teaspoon vanilla extract

Instructions

  • Prepare Fruits: Peel and dice the mango, slice the jackfruit, and seed the lychees and longans. For uniformity and presentation, keep the fruits bite-sized.
  • Make Jellies: Prepare pandan jelly and cut it into cubes. If using grass jelly, pre-chill it. For red rubies, coat diced water chestnuts in red food coloring and tapioca flour, then boil until they float.
  • Prepare Coconut Milk Base: Simmer coconut milk with water, sugar, and salt. Optionally add pandan or vanilla for enhanced aroma.
  • Assemble the Dessert: Layer the fruits, jellies, and red rubies in a serving bowl. Pour the coconut milk over the top and add crushed ice to keep it refreshing.

Notes

For added richness, drizzle condensed milk over the top before serving. Customize the fruits and jellies according to availability or personal preference.
