For the Roast:
- 3–4 lb arm roast
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon smoked paprika (optional)
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- ½ teaspoon dried rosemary
- 1 onion, sliced
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 2 carrots, cut into chunks
- 2 potatoes, cut into chunks
- 1 tablespoon cornstarch (for gravy, optional)
Instructions
- Prep the Roast: Pat the arm roast dry. Mix salt, pepper, paprika, garlic powder, thyme, and rosemary, then rub the seasoning all over the roast.
- Sear the Meat: Heat olive oil in a pan and brown the roast on all sides.
- Slow Cook or Oven-Braise: Place the roast in a slow cooker or roasting pan. Add onions, garlic, beef broth, Worcestershire sauce, carrots, and potatoes.
- Cook:
- Slow Cooker: Cook on low for 8-10 hours or high for 5-6 hours.
- Oven: Cover and bake at 325°F (163°C) for 3-4 hours.
- Make the Gravy (Optional): Mix cornstarch with a little cold water and stir into the cooking juices to thicken.
- Serve & Enjoy: Slice the tender roast and serve with vegetables and gravy.
